Place the recommended quantity of soaked smoke chips directly on the briquettes, place the lid on the barbecue quickly and wait for white smoke to appear. Chunks are ideal for longer, low and slow cooking and should just be placed directly on the briquettes and don't need soaking. Place your food on the cooking grate and put the lid on. The food will now be smoked at the same time as it is cooked.
